A bakery in the French tradition, La Panetière has been a Halles merchant since 1983.
Pierre Le Bris, an artisinal bread baker born in France, shares his passion for the art of breadmaking by offering customers 50 varieties of sourdough bread, each kneaded and baked on-site using traditional methods and made from organic, unbleached flours. He also creates custom breads based on special orders from his clients.
Stéphane Tortoricci, a pastry chef hailing from the southwest of France, is truly passionate about fine cuisine and pastry-making. Each week, he makes 30 or so sophisticated, imaginative pastries of all sorts, using only the finest chocolates and freshest fruits for his sweets.
